Tuna Avocado Salad

Ingredients
  

  • 1 can 5 oz white tuna in water, drained
  • 1 ripe avocado peeled and pitted
  • 1 tbsp red onion finely minced
  • 1 tbsp fresh lemon juice
  • Salt and black pepper to taste
  • Optional: a pinch of red chili flakes

Method
 

  1. In a medium bowl, mash the avocado with the lemon juice until creamy, leaving a few small chunks for texture.
  2. Flake in the drained tuna and add the minced red onion.
  3. Season with salt, pepper, and chili flakes if you like a little heat.
  4. Gently fold everything together. Don't overmix, you want texture, not paste.
  5. Serve it on its own, with cucumber slices, or wrapped in lettuce for a low-carb taco.

Notes

  1. Tuna options: Chunk light tuna is milder and lower in mercury than albacore (white) tuna. Canned salmon also works.
  2. Stop browning: Press plastic wrap directly onto the surface and add a little extra lemon juice. Still, this is best eaten the same day.
  3. Add crunch: Diced celery, cucumber or chopped pickles add texture without much volume.
  4. Creamier: Stir in 1 tbsp Greek yogurt if your avocado is on the small side.
