Ingredients
  

  • 2 medium sweet potatoes about 1 lb; peeled or well scrubbed
  • 1 tbsp olive or avocado oil
  • 1 tbsp cornstarch or arrowroot or potato starch
  • 1/2 tsp salt
  • 1/2 tsp smoked paprika
  • 1/4 tsp garlic powder
  • black pepper to taste

Method
 

  1. Cut the sweet potatoes into even fries about 1/4 inch thick. Pat them dry with a clean towel.
  2. Toss the fries with the oil in a large bowl until lightly coated.
  3. Sprinkle the cornstarch, salt, smoked paprika, garlic powder and pepper over the fries and toss until no dry spots remain.
  4. Arrange the fries in a single layer in the air fryer basket, working in batches so they don't overlap.
  5. Air fry at 380°F (195°C) for 12 to 15 minutes, shaking the basket halfway through, until browned at the edges.
  6. Let them rest 1 minute so they crisp up, then serve right away.

Notes

  • Batches: a crowded basket steams the fries; cook in 2 batches if needed.
  • Thicker cuts: add a few minutes and check every 2 minutes.
  • Reheat: 2 to 3 minutes at 380°F in the air fryer, not the microwave.
