  • 1 cup zucchini sliced
  • 1 cup bell peppers chopped
  • 1 tbsp olive oil
  • Garlic powder paprika, salt, and pepper
  • Optional: grated Parmesan for the last 2 minutes

Method
 

  1. Preheat the air fryer to 400°F for about 3 minutes.
  2. Pat the veggies completely dry. This is the step that decides crispy versus soggy.
  3. Toss them with the olive oil and seasonings until evenly coated.
  4. Spread them in a single layer in the basket, not piled up.
  5. Air fry for 10 to 12 minutes, shaking the basket halfway through.
  6. Add Parmesan for the last 2 minutes if you're using it.
  7. Serve immediately, while the edges are still crisp.
