Ingredients

  • 1.5 lbs lean ground turkey 93% lean (swap: 90% lean ground beef for a richer flavor)
  • ½ cup rolled oats swap: almond flour for low-carb
  • 2 large eggs
  • ½ cup yellow onion finely diced
  • ½ cup bell pepper finely diced
  • 3 cloves garlic minced
  • 2 tbsp Worcestershire sauce
  • 1 tsp smoked paprika
  • 1 tsp dried thyme
  • ½ tsp salt
  • ¼ tsp black pepper
  • 3 tbsp tomato paste
  • 1 tbsp apple cider vinegar
  • 1 tbsp honey

Method

  1. Preheat your oven to 375°F and lightly grease a standard 9x5 loaf pan.
  2. Combine the turkey, oats, eggs, onion, bell pepper, garlic, Worcestershire sauce, smoked paprika, thyme, salt, and pepper in a large bowl.
  3. Mix with your hands until just combined, stop the moment the ingredients come together.
  4. Transfer the mixture into the loaf pan and press it into an even shape.
  5. Whisk together the tomato paste, apple cider vinegar, and honey in a small bowl.
  6. Spread half the glaze evenly over the top of the loaf.
  7. Bake at 375°F for 45 minutes.
  8. Pull it out, spread the remaining glaze on top, and return to the oven for 10–15 minutes until the internal temperature reads 165°F.
  9. Rest the loaf for 10 minutes before slicing, this keeps it juicy and slice-ready.
