Peanut Butter Banana Bites

Peanut butter banana bites: a 3-ingredient frozen snack that is creamy, naturally sweet, and grab-and-go. Healthy, kid-friendly, and no baking required.

Ingredients
  

  • 2 large ripe bananas sliced into rounds
  • 1/4 cup natural creamy peanut butter no added sugar
  • 2 tbsp dark chocolate chips or crushed walnuts optional

Method
 

  1. Slice the bananas into even rounds, about 1/2 inch thick.
  2. Spread a small teaspoon of peanut butter onto half of the banana slices.
  3. Top each one with another banana round to make little sandwiches.
  4. Press a dark chocolate chip into the center of each bite, or sprinkle with crushed walnuts.
  5. Freeze for 15 minutes before serving. This firms the peanut butter and makes them cool and refreshing.

Notes

  1. Banana ripeness: Use bananas with a few brown spots: sweet but still firm enough to slice cleanly.
  2. Nut-free: Sunflower seed butter or soy nut butter work the same way.
  3. Chocolate-dipped version: Melt ½ cup dark chocolate with 1 tsp coconut oil and dip each frozen bite halfway, then freeze again for 10 minutes.
  4. Storage: Freeze in a single layer, then transfer to a freezer bag. Keep up to 2 months; let them sit 5 minutes before eating.
