Chia Seed Water

Servings: 1 glass

Ingredients
  

  • 2 tbsp chia seeds
  • 12 oz cold water
  • 0.5 lemon or lime, juiced
  • 1 tsp honey or maple syrup optional; or a pinch of sea salt

Method
 

  1. Add the chia seeds to a glass or jar with the water, then stir well for 15 to 20 seconds.
  2. Wait 5 minutes, then stir again to break up any clumps.
  3. Let it sit another 10 minutes, or overnight in the fridge, until the seeds swell into a soft gel.
  4. Stir in the citrus juice and optional sweetener, then drink cold.

Notes

Ramp up slowly and drink plenty of water: a sudden jump in fiber causes bloating and gas. Always let the seeds fully gel before drinking - dry chia swells on the way down and can be a choking hazard, particularly for anyone with swallowing difficulties.
