This dense bean salad is my Mediterranean version: chickpeas and cannellini beans with cucumber, tomatoes, olives and feta in a lemon-oregano dressing. It takes 15 minutes, keeps for 3 to 4 days, and tastes better the next day, once the beans have soaked up the dressing.

What Is a Dense Bean Salad?

A dense bean salad is mostly beans, usually two kinds, with small amounts of chopped vegetables, something briny, cheese or meat, and a sharp dressing. Recipe developer Violet Witchel made the idea go viral, and Allrecipes describes it as a multi-bean salad mixed with vegetables, meats or cheese, and a dressing.

What makes it “dense” is the ratio. A regular salad is leaves with a few beans on top; this one flips that. Beans do the heavy lifting, which is why a bowl works as a full lunch rather than a side.

What Do You Need for a Mediterranean Dense Bean Salad?

  • Chickpeas and cannellini beans. One can of each, drained and rinsed. Chickpeas stay firm and nutty, and cannellini are softer and creamier, so together the texture doesn’t get boring. Rinsing also washes off some of the canning liquid’s sodium.
  • Cucumber, cherry tomatoes and red onion. These bring the crunch and freshness. Dice them about the size of a chickpea so every bite gets a bit of everything.
  • Kalamata olives and feta. They’re briny and salty, so you rarely need to add much salt.
  • Parsley. A big handful, chopped. Fresh dill or mint works too.
  • Lemon-oregano dressing. Olive oil, lemon juice, a splash of red wine vinegar, dried oregano and one grated garlic clove.

How Do You Make Dense Bean Salad?

Whisk the dressing in the bottom of a big bowl, add the drained beans, and toss them first so they start soaking up the flavor. Then fold in the chopped vegetables, olives, feta and parsley. Let it sit at least 15 minutes, or better, overnight in the fridge. Full amounts are in the card below.

Ingredients
  

Salad
  • 1 can (15 oz) chickpeas drained and rinsed
  • 1 can (15 oz) cannellini beans drained and rinsed
  • 1 cup cucumber diced small
  • 1 cup cherry tomatoes quartered
  • 1/4 cup red onion finely diced
  • 1/3 cup Kalamata olives halved
  • 1/2 cup feta cheese crumbled
  • 1/4 cup fresh parsley chopped
Lemon-oregano dressing
  • 3 tbsp extra virgin olive oil
  • 2 tbsp lemon juice
  • 1 tbsp red wine vinegar
  • 1 tsp dried oregano
  • 1 clove garlic grated
  • salt and black pepper to taste; the olives and feta are salty

Method
 

  1. Whisk the olive oil, lemon juice, red wine vinegar, oregano and garlic in the bottom of a large bowl.
  2. Add the drained chickpeas and cannellini beans and toss so they are coated in the dressing.
  3. Add the cucumber, tomatoes, red onion, olives, feta and parsley. Fold gently to combine.
  4. Taste, then season with salt and pepper. It rarely needs much salt.
  5. Let it sit at least 15 minutes before serving, or refrigerate overnight for the best flavor.

How Long Does Dense Bean Salad Last?

Mine keeps well for 3 to 4 days in an airtight container in the fridge, and it’s at its best on day two, once the beans have absorbed the dressing. That makes it one of the easiest meal-prep lunches there is: make it Sunday, eat it through Wednesday.

  • Keep the cucumber crisp: if you’re prepping for 4 days, store the diced cucumber separately and stir it in each morning.
  • Refresh before serving: the beans drink up the dressing, so a squeeze of lemon and a drizzle of oil wakes it back up.
  • Add soft herbs late if you want them bright green; parsley holds up better than basil.

How Can You Add More Protein?
